Jack Stacks

  1. Combine sugar and 1 cup butter in bowl; beat at medium speed until creamy.
  2. Add egg, corn syrup and 1 teaspoon vanilla.
  3. Continue beating until well mixed.
  4. Add all remaining cookie ingredients; beat at low speed until well mixed.
  5. Divide dough into thirds.
  6. Shape each third into a ball; flatten slightly.
  7. Wrap each in plastic food wrap; refrigerate at least 1 hour or until firm.
  8. Heat oven to 375F.
  9. Roll out dough on well-floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8- to 1/4-inch thickness.
  10. Cut with 5-inch snowman cookie cutter.
  11. Place 2 inches apart onto greased cookie sheets.
  12. Bake 5-7 minutes or until set.
  13. Cool 1 minute on cookie sheets; remove to cooling rack.
  14. Cool completely.
  15. Combine powdered sugar, 1/2 cup butter and 2 teaspoons vanilla in bowl.
  16. Beat at low speed, adding enough half & half for desired spreading consistency.
  17. Add red and yellow food color, 1 drop at a time, until desired orange color.
  18. Frost cookies.
  19. Create faces on each round section using black decorator gel.
  20. Add green gumdrop piece for stem.
  21. *Substitute orange food color.
