Pepperoni Pizza Bread

  1. Heat oven to 350.
  2. Coat the bottom of an 8 1/2 x 4 1/2"-inch loaf pan with nonstick spray.
  3. In large bowl, whisk together flour, sugar, baking powder, garlic salt, Italian seasoning and pepper.
  4. In medium-size bowl, whisk eggs, milk and olive oil until blended; stir in pepperoni, sun-dried tomatoes and cheese.
  5. Make a well in flour mixture; pour in egg mixture.
  6. Stir until dry ingredients are just moistened.
  7. Gently scrape into pan to rack to cool 5 minutes.
  8. Run a spatula around edges.
  9. Remove bread from pan; cool on rack.
  10. Note: For muffins, coat bottoms of muffin pans with nonstick cooking spray or line with muffin cup liners.
  11. For 12 standard muffins, spoon 1/4 cup batter into each cup.
  12. Bake at 400 for 15-20 minutes.
