Polynesian Chicken(Servings: 12)
- 6 whole chicken breasts, split
- 6 legs
- 6 thighs
- 3 (1 lb.) cans fruits (for salad)
- 6 oz. bottle soy sauce
- 1 clove garlic, crushed
- 3 (8 oz.) jars sweet and sour sauce
- In large, shallow roasting pan, put chicken, skin side up. Drain fruit, reserving syrup.
- Pour syrup and soy sauce over chicken.
- Add garlic.
- Bake, uncovered, at 350u0b0 for 1 hour.
- Baste and turn often.
- Pour liquid from chicken into saucepan and add sweet and sour sauce to this.
- Boil until sauce thickens and is reduced to about 3 1/2 cups (about 30 minutes).
- Pour over chicken.
- Refrigerate, covered, overnight.
- Next day, in 350u0b0 oven, bake chicken, uncovered, basting often, for 30 minutes. Then add fruit and bake and baste 20 to 30 minutes longer.
- Serve with rice.
- Can add toasted almonds to cooked rice.
