Polynesian Chicken(Servings: 12)

  1. In large, shallow roasting pan, put chicken, skin side up. Drain fruit, reserving syrup.
  2. Pour syrup and soy sauce over chicken.
  3. Add garlic.
  4. Bake, uncovered, at 350u0b0 for 1 hour.
  5. Baste and turn often.
  6. Pour liquid from chicken into saucepan and add sweet and sour sauce to this.
  7. Boil until sauce thickens and is reduced to about 3 1/2 cups (about 30 minutes).
  8. Pour over chicken.
  9. Refrigerate, covered, overnight.
  10. Next day, in 350u0b0 oven, bake chicken, uncovered, basting often, for 30 minutes. Then add fruit and bake and baste 20 to 30 minutes longer.
  11. Serve with rice.
  12. Can add toasted almonds to cooked rice.
