Bruschetta

  1. Mix dressing, vinegar, oregano and tomatoes; cover.
  2. Marinate in refrigerator 2 hours.
  3. Top each toasted bread slice with 1/4 cup of the tomato mixture; sprinkle with about 1 Tbsp.
  4. of the cheese.
  5. Place on 2 full sheet pans lined with parchment paper (or 1 lined half sheet pan for trial recipe).
  6. Bake in 350F-conventional oven for 6 to 8 minutes or until lightly browned.
