Pineapple Glazed Pork Tenderloin Recipe

  1. Drain pineapple and keep the juice.
  2. Keep pineapple rings for garnish.
  3. Trim excess fat from pork.
  4. Place pork on a rack in a baking pan.
  5. Mix 1/3 c. juice, mustard, ginger, paprika, brown sugar, lemon juice and cornstarch in a small pan.
  6. Bring to a boil and stir till thickened.
  7. Brush pork loin with part of the glaze.
  8. Bake uncovered at 350 degrees for 1 hour or possibly till meat is tender.
  9. Brush meat with glaze several times during baking.
  10. Turn meat over and brush both sides.
  11. Arrange pineapple rings and serve.
  12. Slice meat across grain.
