Blueberry & Peach Salsa

  1. Zest the lime and place zest in a mixing bowl.
  2. Cut it in half and squeeze lime juice into the zest.
  3. Add coarsely chopped blueberries, diced peach, shallot, basil and chives and gently toss to combine.
  4. Stir in the olive oil, salt and pepper to taste, and mix well with a spatula.
  5. Cover bowl with plastic wrap and refrigerate 2 hours before serving.
  6. I love to use this with a cheese platter.
  7. Enjoy!
