Blueberry & Peach Salsa
- 1 whole Lime ( For Zest And Juice)
- 1- 1/2 cup Fresh Blueberries (rinsed, Coarsely Chopped)
- 1 whole Large Fresh Peach, Peeled, Pitted, Finely Diced
- 1 whole Small Shallot (diced Finely)
- 2 teaspoons Fresh Basil, Chopped
- 2 teaspoons Fresh Chives, Chopped
- 1 teaspoon Olive Oil
- 2 pinches Each: Salt And Black Pepper (to Taste)
- Zest the lime and place zest in a mixing bowl.
- Cut it in half and squeeze lime juice into the zest.
- Add coarsely chopped blueberries, diced peach, shallot, basil and chives and gently toss to combine.
- Stir in the olive oil, salt and pepper to taste, and mix well with a spatula.
- Cover bowl with plastic wrap and refrigerate 2 hours before serving.
- I love to use this with a cheese platter.
