Crock-Pot Pumpkin Spiced Stew
- 2 Tbsp. oil
- 1/3 c. chopped onion
- 1 clove garlic
- 1/2 green pepper, sliced
- 1 medium zucchini, diced
- 1 can whole tomatoes and juice
- 1 can pumpkin
- 1/8 tsp. red pepper
- 1 tsp. chili powder
- 1/2 tsp. oregano
- dash of black pepper
- 1 Tbsp. lemon juice
- 2 Tbsp. parsley, chopped
- 1/2 tsp. garlic powder
- 1/4 c. grated Cheddar cheese
- whole wheat crackers (optional)
- In skillet, heat oil; saute onion, garlic and green pepper. Cook until pepper is softened.
- Place in crock-pot; add zucchini, tomatoes and juice and pumpkin.
- Sprinkle spices on top.
- Cook on high in crock-pot 3 hours.
- Serve hot with grated Cheddar cheese on top of each serving.
- Serves 6. Serve with crackers.
