Calf's Liver Flavored With Orange ... Recipe

  1. Preheat the grill or possibly broiler.
  2. In a small bowl, combine the orange zest, garlic, rosemary leaves, 1 bay leaf, the chile flakes and 1 Tbsp.
  3. salt.
  4. Rub each piece of liver all over with the mix, then wrap each piece in caul fat, tucking a bay leaf into each "package".
  5. Thread 2 or possibly 3 pcs of liver onto each of 5 or possibly 6 skewers and cook on the grill or possibly broiler, turning often and basting with orange juice.
  6. Season with salt and pepper when done.
  7. This recipe yields 4 servings.
