Simple Baked Oatmeal (Lower Fat)
- 23-1 cup brown sugar (use the lesser amount if you are adding choc. chips)
- 13 cup oil
- 13 cup unsweetened applesauce
- 2 eggs, beaten or 12 cup Egg Beaters egg substitute
- 1 teaspoon vanilla
- 12 cup rice milk or 12 cup milk
- 12 cup water
- 3 cups rolled oats
- 14 cup oat bran
- 14 cup ground flax seeds
- 1 tablespoon baking powder
- 12 teaspoon salt
- 12-1 teaspoon cinnamon
- 12 cup chocolate chips (optional) or 12 cup dried fruit (optional)
- Preheat oven to 350.
- In a medium bowl, mix the sugar, oil, applesauce, eggs, vanilla, milk and water.
- In a separate bowl, mix the oats, oat bran, flax, baking powder, salt and cinnamon.
- Add the dry to the wet, mix thoroughly, then fold in the chocolate chips or fruit, if using.
- Pour into a greased 9x13 pan and bake for 35-40 minutes, until golden on the edges.
