Marinated Vegetables
- 1 head cauliflower, cut into flowerets
- 1 bunch broccoli, cut into flowerets
- 2 medium zucchini, sliced
- 2 bell peppers, cut julienne (red or green)
- 1 lb. fresh mushrooms, cleaned, stems removed and cut in half
- 6 oz. pitted black olives
- 1 c. distilled white or wine vinegar
- 1 c. vegetable oil
- 1/2 c. fresh (not bottled) lemon juice
- 2 tsp. granulated sugar
- 3 cloves garlic, minced
- 1 tsp. salt
- 1 tsp. pepper
- Prepare all veggies; place in large bowl with seal (like Tupperware or Rubbermaid).
- Combine vinegar, vegetable oil, lemon juice, garlic, sugar, salt and pepper into shaker container. Shake vigorously.
- Pour marinade over vegetables.
- Cover and marinate in refrigerator overnight, stirring occasionally.
- Makes a bunch!!
