Lemon Flavored Pound Cake
- 2 sticks oleo
- 3 c. sugar
- 8 eggs (medium size)
- 3 c. cake flour
- 1/3 tsp. soda
- 1/2 pt. sour cream
- 1 Tbsp. lemon extract
- 1 c. butter, softened
- 3 c. sugar
- 5 large eggs
- 3 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. apple pie spice
- 2 c. canned or cooked mashed pumpkin
- 1/3 c. rum
- Beat butter at medium speed with electric mixer about 2 minutes or until creamy.
- Gradually add sugar, beating at medium speed 5 to 7 minutes.
- Add eggs, one at a time, beating just until yellow disappears.
- In separate bowl, combine flour and next 6 ingredients.
- In another bowl, combine pumpkin and rum.
- Add flour mixture to creamed mixture, alternately with pumpkin mixture.
- Mix at lowest speed just until blended after each addition.
- Pour batter into a greased and floured 10-inch tube pan.
- Bake at 325u0b0 for 1 hour and 25 to 30 minutes or until a wooden toothpick inserted in center comes out clean.
- Cool in pan on a wire rack and let cool completely on wire rack.
- Delicious with cream cheese icing or delicious without icing.
