Greens Stewed with Oxtails

  1. In a large pot, melt butter, add octails and onions; brown.
  2. Add garlic and cook 4 minutes.
  3. Add collard greens; toss until coated with butter and onions.
  4. Cook 5 minutes on medium heat.
  5. Raise heat to high and add chicken stock, vinegar, and maple syrup.
  6. Season to taste with salt and pepper.
  7. Bring to a boil.
  8. Turn heat to low and simmer 1-1/2 to 1-3/4 hours.
