Strawberry Mousse Pie
- 1 pt. (2 cups) strawberries, hulled Safeway 1 lb For $3.99 thru 02/09
- 1-1/2 cups boiling water
- 2 pkg. (4-serving size each) JELL-O Strawberry Flavor Sugar Free Gelatin
- 1 cup vanilla low-fat yogurt
- 32 vanilla wafers
- 1 cup thawed COOL WHIP LITE Whipped Topping
- Place strawberries in blender; cover.
- Blend until pureed; set aside.
- Stir boiling water into dry gelatin mix in medium bowl until dissolved.
- Add strawberry puree; mix well.
- Refrigerate 45 min.
- or until slightly thickened.
- Add yogurt; beat with electric mixer on low speed until light and fluffy.
- Line bottom and side of 9-inch pie plate with wafers.
- Fill with gelatin mixture.
- Refrigerate 2 hours or until set.
- Top with the whipped topping just before serving.
- Store leftover dessert in refrigerator.
