Potato Casserole(Serves 8 To 10)

  1. Preheat oven to 350u0b0.
  2. Cook potatoes in jackets with bay leaf in boiling salted water until barely tender.
  3. Cool, peel and grate.
  4. Add butter to soup.
  5. Stir until smooth.
  6. Blend in sour cream, salt, pepper, green onions and 1 1/2 cups cheese.
  7. Pour over potatoes.
  8. Mix gently until blended.
  9. Spoon onto casserole. Bake, uncovered, in 350u0b0 oven for 30 minutes.
  10. Combine remaining cheese with cornflake crumbs and sprinkle over casserole.
  11. Bake 10 to 15 minutes.
