Broccoli And Crab Bisque Soup
- 1 c. sliced green onions
- 1 c. sliced, fresh mushrooms
- 1 c. fresh or frozen (thawed), chopped broccoli
- 1/4 c. butter
- 1/4 c. all-purpose flour
- 1/4 tsp. dried thyme, crushed
- 1/8 tsp. pepper
- 1/8 tsp. salt
- 1 small bay leaf
- 3 c. chicken broth
- 1 c. light cream
- 3/4 c. shredded Jarlsberg or Swiss cheese
- 1 (6 oz.) can crabmeat, drained
- 1 clove garlic, minced
- In a 3-quart saucepan, cook onions, mushrooms, broccoli and garlic in butter until crisp.
- Blend in flour, thyme, 1/8 teaspoon of salt, pepper and bay leaf.
- Add chicken broth and cream all at once.
- Cook and stir until thickened and bubbly.
- Cook and stir 1 minute more.
- Add cheese; stir until cheese is melted.
- Add crabmeat; heat through.
