Whole-Grain Muffins
- 2 c. whole grain or multigrain pancake mix
- 1 c. whole milk
- 1 large egg
- 1/4 c. butter
- 1 c. pitted prunes
- Preheat oven to 375 degrees F. Line 12-cup muffin pan with paper liners.
- In large bowl, whisk 2 cups whole grain or multigrain pancake mix, 1 cup whole milk, and 1 large egg until blended.
- Whisk in 1/4 cup butter, melted, and then prunes, finely chopped, just until combined.
- Divide batter among muffin cups.
- Bake 25 minutes or until toothpick inserted in center comes out clean.
