Whole-Grain Muffins

  1. Preheat oven to 375 degrees F. Line 12-cup muffin pan with paper liners.
  2. In large bowl, whisk 2 cups whole grain or multigrain pancake mix, 1 cup whole milk, and 1 large egg until blended.
  3. Whisk in 1/4 cup butter, melted, and then prunes, finely chopped, just until combined.
  4. Divide batter among muffin cups.
  5. Bake 25 minutes or until toothpick inserted in center comes out clean.
