Chorizo Sausages with Pickled Mushrooms and Romesco Sauce

• 4 each chorizo sausage
• 4 each hot dog buns split
• 1 cup parmesan, parmigiano-reggiano cheese, grated
• 1 cup Romesco Sauce, prepared (click to view recipe)
• 1 cup Quick and Easy Pickled Mushrooms, prepared (click to view recipe)

1. Heat the oil in a large grilled pan over high heat.
2. Add the sausages, turning once, and cook for about 5 minutes each side or until completely cooked.
3. Grilled the hot dog buns if needed.
4. Top the buns with sausages, romesco sauce, pickled mushrooms and grated Parmesan cheese as needed.
5. Serve.
