Chorizo Sausages with Pickled Mushrooms and Romesco Sauce
- 4 each chorizo sausage
- 4 each hot dog buns split
- 1 cup parmesan, parmigiano-reggiano cheese, grated
- 1 cup Romesco Sauce, prepared (click to view recipe)
- 1 cup Quick and Easy Pickled Mushrooms, prepared (click to view recipe)
- Heat the oil in a large grilled pan over high heat.
- Add the sausages, turning once, and cook for about 5 minutes each side or until completely cooked.
- Grilled the hot dog buns if needed.
- Top the buns with sausages, romesco sauce, pickled mushrooms and grated Parmesan cheese as needed.
- Serve.
