Carrot Cream Soup with Sweet New Harvest Onions
- 1 Sweet new harvest onions
- 2 Carrot (medium size)
- 30 grams Butter
- 1 pinch Salt
- 200 ml Water
- 2 Consomme bouillon cube
- 250 ml Milk
- 50 ml Fresh cream
- Cut the onions and carrots in half and slice thinly.
- Melt the butter in a saucepan and saute the onions and carrots.
- Add a pinch of salt.
- Fry until the onions are translucent.
- Add the water and consomme bouillon cubes.
- When it comes to the boil, cover with a lid and simmer for 20-30 minutes.
- Turn off the heat, and add the milk and fresh cream.
- Mix in a blender or use a hand mixer until smooth.
- Warm it up before serving.
- Garnish with parsley if you like.
