Curried Vegetable Salad Recipe

  1. Cook vegetables to crisp consistency.
  2. Drain and refrigeratefor 1 hour.
  3. Dice onion and seeded cucumber.
  4. Blend top three ingredients with mayonnaise and pepper.
  5. Add in more mayonnaise, if needed.
  6. Add in curry pwdr to taste and mix well.
  7. Re-refrigeratetill needed.
  8. Serve on lettuce with a radish and sliced egg garnish.
  9. Dust with paprika.
  10. Yield: 4-6 servings.
