Saucy Pudding Cake
- 1 1/4 c. brown sugar
- 1/2 c. sugar
- 2 Tbsp. margarine
- 1 egg
- 3/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. cloves
- 1/2 c. water
- 3/4 c. quick oats
- 1/2 c. raisins
- 1/2 c. chopped nuts
- 1 1/2 c. boiling water
- Beat 1/4 cup brown sugar, 1/2 cup sugar and the softened margarine at medium speed until blended.
- Stir together flour and next 5 ingredients.
- Add to sugar mixture alternately with 1/2 cup water, beginning and ending with flour mixture, beating at low speed until blended.
- Stir in oats, raisins and nuts.
- Spoon into a lightly greased 8-inch square pan.
- Sprinkle with remaining 1 cup brown sugar.
- Pour 1 1/2 cups boiling water over top.
- Do not stir.
- Bake at 350u0b0 for 40 to 45 minutes.
- Serve warm with vanilla ice cream or whipped cream.
- Recipe may be doubled.
- Bake in a 9 x 13 pan for 50 minutes.
