Cowboy Caviar

  1. In a large bowl, combine vinegar, oil, hot sauce and pepper.
  2. Peel pit and cut avocado into 1/2 inch cubes.
  3. Add to the vinegar mixture and toss lightly.
  4. Drain and rinse beans and corn.
  5. add beans, corn, onion, cilantro, and tomatoes.
  6. Mix gently to coat.
  7. Add salt and pepper to taste.
  8. Serve with tortilla chips.
  9. It is also great as a relish with grilled chicken or steak.
