Cowboy Caviar
- 2 tbsp Red wine vinegar
- 2 tsp Olive oil
- 1 clove Garlic
- 1 1/2 tsp Hot pepper sauce (tabasco)
- 1 Fresh ground black pepper
- 1 Ripe avocado
- 15 oz Can black beans
- 15 oz can pinto beans
- 16 oz can corn
- 2/3 cup sliced green onion
- 1/2 cup chopped fresh cilantro
- 1/2 lb Roma tomatoes, chopped salt to taste
- In a large bowl, combine vinegar, oil, hot sauce and pepper.
- Peel pit and cut avocado into 1/2 inch cubes.
- Add to the vinegar mixture and toss lightly.
- Drain and rinse beans and corn.
- add beans, corn, onion, cilantro, and tomatoes.
- Mix gently to coat.
- Add salt and pepper to taste.
- Serve with tortilla chips.
- It is also great as a relish with grilled chicken or steak.
