Sig's Pancake basket with fruit
- 150 grams plain flour
- 1 pinch salt
- 2 egg whites
- 150 ml orange juice
- 200 ml skimmed milk
- 4 medium oranges
- 225 grams blueberries
- 6 strawberries
- do not fill these baskets until just before serving or they will become soggy
- preheat oven to 200C/400F
- sift the flour and salt together make a well add egg whites , orange juice and milk, whisk hard until you get a very smooth and bubbly batter,heat frying pan to high with just a little oil.
- Make 6 thin pancakes.
- place 6 small oven proof bowls upside down on a baking tray, arrange the pancakes over them.
- Bake in oven fir about ten minutes until they are crisp and look like little baskets.
- Lift of the moulds and cool, set aside until needed.
- for filling, pare a thin piece of the orange rind, cut it into thin strips, blanch in boiling water for 30 seconds, rinse in cold water set aside.
- Cut the peel and white pith of orange.
- Devide into neat segments.Catch juice.
- combine with the blueberries heating them very gentle
- spoon fruit into basket, add two halves of strawberries to each basket and sprinkle the orange peel for garnish.
- Serve with creme fraiche
