Apple-Pecan Muffins
- 2 cups whole grain cereal flakes with pecans
- 1 cup fat-free milk
- 1 cup flour
- 1/3 cup firmly packed brown sugar
- 2 tsp. CALUMET Baking Powder
- 1/4 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 cup chunky applesauce
- 1 egg, lightly beaten
- 2 Tbsp. oil
- Preheat oven to 400 degrees F. Mix cereal and milk in medium bowl; let stand 3 min.
- Meanwhile, combine flour, sugar, baking powder, cinnamon and salt in large bowl.
- Stir in applesauce, egg and oil.
- Add cereal mixture; stir just until blended.
- (Batter will be lumpy.)
- Spoon evenly into 12 paper-lined medium muffin cups, filling each cup two-thirds full.
- Bake 20 min.
- or until golden brown.
- Cool in pan 5 min.
- Remove to wire rack.
- Cool completely.
