Open Faced Chik'n Burrito
- 4 small corn tortilla
- 1 pkg. (283 g) simulated chicken veggie burgers
- 1 can (19 oz / 540 mL) black beans
- 1/2 pkg. (35 g) taco seasoning mix
- 1/2 juice of lime
- 1 tsp. oil
- 2 chopped plum tomato Safeway 1 lb For $1.29 thru 02/09
- 1 chopped onion
- 1/4 cup black olives
- 1/2 cup Cracker Barrel Cheddar Cheese
- 1 cup chopped lettuce
- Just follow our 3 simple steps
- Bake 1 pkg.
- (283g) simulated chicken veggie burgers according to package directions.
- Cut each patty into quarters.
- Mix 1 can (19 oz / 540 mL) drained black beans with 1/2 pkg.
- taco seasoning mix and the juice of half a lime in a bowl.
- Mash with a potato masher until beans are pulpy.
- Heat 1 tsp.
- oil in a non-stick frypan.
- Cook bean mixture 4 - 6 minutes, until bubbling, stirring frequently.
- Divide bean mixture, patties, 2 chopped plum tomatoes, 1 chopped onion, 1/4 cup pitted black olives, 1 cup chopped lettuce and 1/2 cup grated Cracker Barrel Cheddar Cheese between 4 small corn tortillas.
