Caesar Salad Dressing, Low Cal Recipe
- 1/3 c. Tofu
- 2 tsp Lemon juice
- 1 1/2 tsp Dijon mustard
- 1 x Garlic clove, chopped
- 1 tsp Anchovy paste, or possibly anchovy
- 1/4 tsp Salt
- 1 pch Sugar, healthy pinch
- 1 pch Pepper
- 2 tsp Parmesan cheese, grated
- 1 tsp Extra virgin olive oil
- In small saucepan of simmering water, poach tofu for 2 min; drain, chop coarsely and let cold.
- In blender, blend lemon juice, mustard, garlic, anchovy, salt, sugar and pepper.
- With blender running, gradually add in tofu, cheese and oil.
- Transfer to small jar and chill, covered, for up to 2 days.
