Chicken Fajitas
- 4 boneless chicken breasts
- cream cheese
- Mozzarella cheese
- Monterey Jack cheese with jalapenos
- 1 small can whole kernel corn (Mexican style)
- picante sauce
- large size tortilla shells
- In frying pan, chop and slice chicken breasts into small pieces.
- Mix in corn after chicken breasts are cooked thoroughly, then put a small amount of picante sauce in.
- Stir and then simmer. Spread cream cheese on tortilla shells.
- Put chicken and corn mixture in middle of shells.
- Slice a couple strips of Monterey Jack and place on top of mixture, then put on Mozzarella cheese. Fold shell and close with toothpick.
- Place in foiled cookie sheet. Sprinkle a little Mozzarella on top.
- Bake at 350u0b0 for 10 to 15 minutes.
- When done, serve with picante sauce poured over top of each fajita.
- This recipe makes 4 to 5 fajitas.
