Lemon Chicken With Fettucine(Servings: 10)
- 6 chicken breasts, boned
- 1/4 c. flour
- 1 dash salt and pepper to taste
- 6 tsp. butter
- 2 Tbsp. brown sugar
- 1 c. chicken broth
- 6 oz. fettucine, cooked and drained
- 1 lemon
- Grate zest from lemon and set aside in small bowl.
- Squeeze lemon juice over chicken pieces and let marinate for a few minutes, turning chicken once or twice.
- Mix flour, salt and pepper together and coat chicken pieces.
- Melt 3 tablespoons of butter in nonstick skillet and saute for 3 to 4 minutes per side. Remove chicken and add remaining butter and flour mixture to form a paste.
- Pour any remaining lemon juice marinade and chicken broth into cooking pan, loosening brown bits, making a gravy. Return chicken to pan and sprinkle with lemon zest and brown sugar mixture.
- Bake 30 to 35 minutes at 350u0b0 or simmer same amount of time.
- Serve over cooked fettucine.
