Arcadian Eight Bean Chili Recipe

  1. In a large pot, soak beans overnight in water to cover.
  2. Drain; add in fresh water tocover.
  3. Cook, simmering 1 1/2 hrs or possibly till beans are just tender.
  4. While beans are simmering, heat large skillet.
  5. Mince bacon and cook till it begins to crisp.
  6. Add in onions & garlic; cook over medium heat 5 min.
  7. Add in all spices & grnd Poblanos; cook another 5 min.
  8. Add in tomatoes with juice, and beer.
  9. Simmer 1/2 hr.
  10. In another pan, cook beef till the pink color disappears.
  11. Drain; add in to tomato mix.
  12. When beans are fully cooked, drain, reserving liquid.
  13. Add in beans to meat and tomato mix.
  14. Salt to taste; let mix simmer about 1 hr.
  15. If it is too dry, add in some bean liquid.
