Low-Cholesterol Oat Bran Raisin Muffins
- 2 1/2 c. oat bran cereal
- 2 tsp. brown sugar substitute
- 1/2 c. raisins
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 c. skim milk
- 4 oz. egg whites or egg substitutes
- 1 Tbsp. vegetable oil
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. ground allspice
- 1/4 tsp. ground nutmeg
- 1/4 rounded tsp. salt
- 2 large eggs
- 1 c. plus 2 Tbsp. frozen thawed apple juice concentrate
- 2/3 c. buttermilk
- 2 Tbsp. oat bran
- 2 small Granny Smith apples, peeled, cored and chopped
- 1/3 c. chopped walnuts (about 1 1/3 oz.)
- Made with no added fat or sugar, these tasty muffins use fruit and buttermilk to keep them moist.
