Goat-Cheese Spreads

  1. In a medium bowl, mash goat cheese with a fork; season with salt and pepper.
  2. Add one of the desired flavorings.
  3. Refrigerate, covered with plastic wrap, up to 1 day; bring to room temperature before serving.
  4. Stir in 1/4 cup homemade (see page 365) or store-bought pesto.
  5. Add 3 tablespoons chopped oil-packed sun-dried tomatoes and 1 teaspoon minced fresh thyme.
  6. Add 1/4 cup chopped toasted pistachios (see page 365) and 2 tablespoons finely snipped fresh chives, saving some to sprinkle on top of each crostini.
