Creamed Kale

  1. Bring a large pot of lightly salted water to a boil.
  2. Add chopped kale.
  3. Return to a boil and cook 2 mintues.
  4. Drain and press out most of the liquid.
  5. Meanwhile, melt butter in a large skillet over medium heat.
  6. Add shallots and saute 3 minutes, until softened.
  7. Add garlic; cook 1 minute.
  8. Stir in flour; cook 1 minute.
  9. Whisk in milk.
  10. Bring to a low simmer and cook 3 - 5 minutes, until thickened.
  11. Stir in salt, nutmeg and pepper.
  12. Fold in kale until well coated with sauce.
