Lemon Crunch

  1. Base/topping:.
  2. Combine cracker crumbs, sugar, flour, coconut and baking powder.
  3. Mix in margarine until crumbly.
  4. Remove 1 cup of base/topping mixture& set aside.
  5. Press remaining mixture into 9" square pan.
  6. Bake in 350 degree oven for 15 minutes.
  7. Filling:.
  8. Combine eggs, lemon juice, sugar and margarine in a heavy pot.
  9. Cook over medium-low heat, stirring often, until thickened.
  10. Spread filling over baked base.
  11. Sprinkle reserved topping over filling.
  12. Return to oven until lightly browned- about 5 minutes.
