Fudge

  1. Put sugar, Dr. Pepper, grated chocolate and corn syrup in a heavy saucepan.
  2. Cook very slowly, stirring constantly, until sugar and chocolate are thoroughly dissolved.
  3. Continue cooking, on low-medium heat, until temperature of 236u0b0 or soft ball stage is reached.
  4. Set off heat and cool at room temperature to lukewarm, 110u0b0.
  5. Add butter and vanilla.
  6. Beat until the candy loses its shiny look.
  7. Add nuts, if desired.
  8. Pour into slightly buttered pans.
  9. When cold, cut into squares.
  10. Yields approximately 2 1/2 to 3 pounds or 36 pieces 1/2-inch thick and 2-inches square.
