Baked Potato with Mushrooms

  1. Preheat an oven to 450 degrees F (230 degrees C).
  2. Pierce potato a few times with a fork.
  3. Place on a microwave safe plate, and cook 10 minutes in the microwave on high, until tender but not mushy.
  4. Transfer potato to a baking dish, and bake 15 minutes in the preheated oven.
  5. Melt butter in a saucepan over medium heat.
  6. Mix in onion.
  7. Cook and stir until tender.
  8. Mix in mushrooms.
  9. Season with salt.
  10. Reduce heat to low, cover, and let sit 5 minutes, or until mushrooms are tender.
  11. Serve potato topped with the mushrooms and yogurt.
