Fat-Free Pasta Primavera
- 1 c. sliced zucchini
- 1/2 c. sliced mushrooms
- 1/4 c. sliced onions
- 1/2 c. sliced red/green pepper
- 1/2 c. green beans, cut in 1/2-inch diagonal pieces
- 1 Tbsp. sliced fresh basil
- 1/2 c. white wine
- 1/2 c. chicken broth
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 rounded Tbsp. flour
- 1 (13 oz.) can evaporated skimmed milk
- your favorite pasta
- Spray frying pan with Pam.
- Saute first 5 ingredients 4 to 5 minutes and remove from heat.
- Meanwhile, spread flour in another large skillet.
- Add can of evaporated skim milk and stir.
- Do not boil as milk will separate.
- Add salt, pepper and fresh basil. When liquid reaches a nice sauce consistency, add sauteed vegetables and serve over hot cooked pasta.
- Sprinkle lightly with Parmesan cheese.
- Serves 4.
