Creamy Spinach & Pasta Skillet
- 4-1/2 cups fibre-enriched white penne pasta, uncooked
- 1 can (14 fl oz/398 mL) diced tomatoes, undrained King Sooper's 1 lb For $0.99 thru 02/09
- 3/4 cup Philadelphia Herb & Garlic Light Cream Cheese Product
- 1 Tbsp. lemon juice
- 8 cups loosely packed baby spinach leaves
- 1/4 cup Kraft 100% Parmesan Light Grated Cheese, divided
- Cook pasta as directed on package, omitting salt.
- Drain pasta, reserving 1/3 cup cooking water.
- Cook tomatoes, cream cheese product and lemon juice in large deep skillet on medium heat 3 to 5 min.
- or until cream cheese is completely melted and mixture is well blended, stirring frequently.
- Add pasta to skillet.
- Stir in spinach, half the Parmesan and just enough of the reserved cooking water until sauce is desired consistency.
- Cook 2 min.
- or just until spinach is wilted and sauce is heated through, stirring frequently.
- Sprinkle with remaining Parmesan.
