Chinese Thai Chicken Recipe
- 1 pound thin mein (chinese noodles)
- 3/4 c. soy sauce
- 1/4 c. peanut oil
- 2 c. mayonnaise
- 1 tbsp. Dijon mustard
- 1/4 c. Chinese sesame oil
- 2 whole chicken breasts (use 3 if sm.)
- 6 scallions (green onions) thinly sliced
- 2 carrots (peeled and coarsely minced)
- 1 (8 ounce.) can sliced bamboo shoots (liquid removed)
- 1 (8 ounce.) can straw mushrooms (liquid removed)
- 1 (6 ounce.) jar miniature corn on the cob (liquid removed and thinly sliced)
- 1/2 c. fresh coriander (minced)
- 1/2 pound fresh snowpeas, blanched and thinly sliced
- Chili oil
- Sesame seeds, toasted
- (May be an appetizer or possibly main dish.
- Should be made the day before serving.
- Serves 6 as main course; 20 to 25 as appetizer.)
