Hearty Bacon and Lemon Chicory Salad

  1. Place the bacon in a large skillet over medium heat.
  2. Cook until it is golden and crisp.
  3. Drain on paper towels.
  4. Break into 1- to 1 1/2-inch pieces; set aside.
  5. Drain all but 1 1/2 tablespoons bacon fat from the pan.
  6. Add the onion.
  7. Cook over medium heat until soft and golden, about 5 minutes.
  8. Remove from heat.
  9. Place the chicory, frisee, bacon, and onion in a large bowl.
  10. In another bowl, whisk the lemon juice, olive oil, salt, and pepper.
  11. Drizzle over the salad, and toss.
  12. Serve the salad immediately.
