Radish and Cucumber Salad
- 2 bunches red radishes, trimmed and sliced thin (about 20 radish)
- 1 english cucumber, peeled and sliced thin (halve slices if large)
- 12 large sweet onion, peeled and sliced thin
- 1 green bell pepper, seeded and cut into thin strips
- 1 12 cups fresh cilantro leaves or 1 12 cups flat leaf parsley, coarsely chopped
- 1 tablespoon fresh ginger, grated
- 12-34 cup rice wine vinegar
- salt and pepper
- Chill vegetables before preparing.
- if possible.
- place prepared radishes, cucumber, onion, and green pepper, in a large bowl.
- Toss well., Cover and refrigerate while chopping cilantro and grating ginger.
- Drizzle rice wine vinegar over vegetables, sprinkling cilantro and ginger on top and toss thoroughly to combine.
- Serve chilled.
