Nutty Barley Salad

  1. Cook and stir barley in hot oil in large saucepan on medium heat 2 to 3 min.
  2. or until lightly toasted.
  3. Stir in water; bring just to boil.
  4. Reduce heat to low; cover.
  5. Simmer 30 min.
  6. or until barley is tender; drain.
  7. Cool 10 min.
  8. Place in large bowl.
  9. Add remaining ingredients; mix lightly.
  10. Serve warm.
  11. Or, cover and refrigerate several hours or until chilled.
