Nutty Barley Salad
- 1 qt. pearl barley
- 1/2 cup oil
- 3 qt. water
- 1-1/2 qt. canned mandarin oranges, drained
- 3 cups KRAFT Honey Dijon Dressing
- 1 qt. red or green peppers, chopped
- 2 cups slivered almonds
- 2 cups green onions, sliced
- 4 tsp. salt
- Cook and stir barley in hot oil in large saucepan on medium heat 2 to 3 min.
- or until lightly toasted.
- Stir in water; bring just to boil.
- Reduce heat to low; cover.
- Simmer 30 min.
- or until barley is tender; drain.
- Cool 10 min.
- Place in large bowl.
- Add remaining ingredients; mix lightly.
- Serve warm.
- Or, cover and refrigerate several hours or until chilled.
