Vegetable Rice Soup Recipe

  1. Tie in cheese cloth.
  2. 1/2 c. Italian red table wine 1 sm.
  3. can corn niblets 1 sm.
  4. can peas 1 can string beans 1 sm.
  5. can lima beans 1 sm.
  6. can mushrooms 1/3 c. dry rice
  7. Saute/fry onions and peppers in oil over moderate heat in Dutch oven (5-10 min).
  8. Add in whole tomatoes with juice and break up gently with spoon.
  9. Simmer till tomatoes are tender.
  10. Add in celery and carrot pcs; add in bouquet garni.
  11. Simmer with lid on till vegetables are tender.
  12. Add in meat if using and rice and cook till rice is almost tender (15-20 min).
  13. Add in canned vegetables.
  14. Simmer till heated through.
  15. Remove garni, salt and pepper to taste.
