Minty White-Chocolate Cookies
- 1 cup unsalted butter, softened
- 1 12 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 14 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 34 cups white chocolate chips
- 1 34 cups peppermint chocolate chips
- In a large mixing bowl, beat butter and sugar at medium speed with an electric mixer until creamy.
- Add eggs one at a time, beating well after each addition.
- Stir in vanilla.
- In a medium bowl, sift together flour, baking soda, and salt.
- Gradually add flour mixture to butter mixture, beating until combined.
- Fold in white chocolate morsels and peppermint baking chips.
- Cover and refrigerate for at least 2 hours.
- Preheat oven to 350 degrees.
- Line 2 baking sheets with parchment paper.
- Drop dough by heaping teaspoonfuls 2 inches apart onto prepared baking sheets.
- Bake for 12 to 15 minutes per batch, or until light golden brown.
- Let cool on pan for 5 minutes.
- Remove to wire racks to cool completely.
