Cooked Orange Marmalade - CERTO Liquid

  1. Remove peels, in quarters, from oranges and lemons.
  2. Set fruit aside.
  3. Flatten peels; scrape off half the white pith and discard.
  4. Cut peels into thin slices; place in large saucepan.
  5. Add water and baking soda; stir.
  6. Cover; simmer 20 min., stirring occasionally.
  7. Chop peeled fruit.
  8. Add, with juices, to saucepan; stir.
  9. Simmer, covered 10 min.
  10. Measure exactly 3 cups prepared fruit into large saucepan.
  11. Add sugar; mix well.
  12. Bring to boil on high heat; cook 1 min.
  13. Remove from heat.
  14. Stir in pectin.
  15. Stir and skim 7 min.
  16. to prevent fruit from floating to surface.
  17. Pour into warm sterilized jars, filling up to 1/4 inch from rims.
  18. Cover with lids.
  19. Let stand at room temperature 24 hours until set.
