Simple Spanakopita Triangles

  1. Heat 1 Tbs.
  2. oil in large skillet over medium-high heat.
  3. Add onion, and saute 5 to 7 minutes, or until beginning to brown.
  4. Add spinach, and cook 3 minutes more, or until mostly dry.
  5. Transfer to bowl to cool.
  6. Stir feta cheese into cooled spinach mixture.
  7. Preheat oven to 350F.
  8. Coat two baking sheets with cooking spray.
  9. Place 1 phyllo sheet on work surface with short side nearest you.
  10. Brush phyllo sheet with olive oil.
  11. Set second phyllo sheet on top, and brush with oil.
  12. Cut phyllo stack into 4 long strips.
  13. Spoon 11/2 Tbs.
  14. spinach mixture on short end of each phyllo strip.
  15. Fold end of strip over filling to make a triangle.
  16. Fold pointed end up to seal triangle.
  17. Continue folding pointed ends up and over phyllo strip until you have a filled triangle.
  18. Transfer to prepared baking sheet.
  19. Repeat with remaining phyllo, oil, and filling.
  20. Bake 15 to 20 minutes, or until golden brown.
  21. Cool 10 minutes before serving.
