Spareribs Barbecued In Soulful Sauce
- 1 c. water
- 1/2 c. prepared mustard
- 5 lb. fresh spareribs
- 2 onions, quartered
- 5 garlic cloves, crushed
- 2 Tbsp. brown sugar
- 1 c. tomato catsup
- 2 Tbsp. pepper sauce
- 1 tsp. paprika
- 2 Tbsp. hickory salt
- 2 Tbsp. chili powder
- juice and grated rind of lemon
- 2 Tbsp. butter or bacon fat
- 1 can tomato sauce
- 1 tsp. sweet basil
- 1 tsp. celery seed
- 1 tsp. thyme
- 1 tsp. cumin seed
- salt, pepper and paprika to taste
- Wipe ribs with clean, damp cloth; cut into pieces for individual servings.
- Sprinkle with salt, pepper and paprika; set aside.
- Place all other ingredients, except ribs, in a large frying pan.
- Simmer for 20 to 30 minutes; cool.
- Place ribs in a large, shallow flat dish; marinate well with sauce on both sides. Cover; store in refrigerator for several hours.
- Cook until well done, basting occasionally.
