Mark Twain'S Favorite Mince Cake

  1. Cream margarine and sugar.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift dry ingredients together.
  4. Combine brandy and cream.
  5. Add flour mixture, alternating with brandy mixture.
  6. In a small bowl combine crumbled mincemeat and 2 tablespoons flour. Mix until mincemeat is well separated.
  7. Fold into batter.
  8. Spoon batter into a greased 9-inch tube pan.
  9. Bake at 325u0b0 for 1 hour.
  10. Allow to cool in pan 10 minutes, then turn out onto wax paper.
  11. It is said this cake is good sliced and toasted and served with coffee.
