Mark Twain'S Favorite Mince Cake
- 1 c. margarine
- 1 c. sugar
- 4 eggs
- 2 c. flour
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 c. brandy
- 1/4 c. heavy cream
- 1 (9 oz.) pkg. mincemeat, crumbled
- 2 Tbsp. flour
- Cream margarine and sugar.
- Add eggs one at a time, beating well after each addition.
- Sift dry ingredients together.
- Combine brandy and cream.
- Add flour mixture, alternating with brandy mixture.
- In a small bowl combine crumbled mincemeat and 2 tablespoons flour. Mix until mincemeat is well separated.
- Fold into batter.
- Spoon batter into a greased 9-inch tube pan.
- Bake at 325u0b0 for 1 hour.
- Allow to cool in pan 10 minutes, then turn out onto wax paper.
- It is said this cake is good sliced and toasted and served with coffee.
