Trinidadian Sugar Cakes
- 4 cups coconut grated
- 1 cup water
- 1 cup sugar
- 1/2 x cream of tartar
- Boil sugar and water to form a light syrup.
- When bubbles the size of small pearls appear, add grated When the cocunut mixture comes away from the sides of the minutes.
- Add essence and food colouring and mix well.
- Drop by spoonfuls on an oiled cookie or enamel tray.
- Allow to harden completely.
- Store in an airtight container.
