Tomato & Balsamic Bruschetta

  1. SPRAY both sides of the baguette slices with oil and toast under a grill or chargrill until golden.
  2. Cool.
  3. SPREAD the PHILLY over each slice of toast, top with tomato and onion.
  4. WHISK together the vinegar, oil, sugar and seasonings, then drizzle over the tomatoes.
  5. Garnish with basil.
  6. Serve immediately.
  7. HANDY TIP: Roasted or chargrilled vegetables may be used in place of the tomato and onion.
