Tomato & Balsamic Bruschetta
- 8 thick slices baguette, ciabatta or similar
- Garlic olive oil spray
- 125 g PHILADELPHIA Light Spreadable Cream Cheese
- 12 cherry tomatoes, halved
- 1/2 small red onion, very finely sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon brown sugar
- salt and pepper, to taste
- Torn basil leaves, for garnish
- SPRAY both sides of the baguette slices with oil and toast under a grill or chargrill until golden.
- Cool.
- SPREAD the PHILLY over each slice of toast, top with tomato and onion.
- WHISK together the vinegar, oil, sugar and seasonings, then drizzle over the tomatoes.
- Garnish with basil.
- Serve immediately.
- HANDY TIP: Roasted or chargrilled vegetables may be used in place of the tomato and onion.
