Steak, Mushroom & Swiss Melt
- 1 boneless beef strip steak (1 lb./450 g), 1 inch thick
- 2 portobello mushrooms, gills removed
- 2 Tbsp. mayonnaise
- 2 Tbsp. chopped canned chipotle peppers in adobo sauce
- 8 slices multi-grain bread
- 4 red onion slices
- 4 Cracker Barrel Swiss Cheese Slices
- 2 cups tightly packed baby arugula
- Heat barbecue to medium-high heat.
- Grill steak 5 to 6 min.
- on each side or until medium-rare (145 degrees F) or desired doneness, adding mushrooms to the barbecue for the last 6 min.
- and turning after 3 min.
- Remove steak and mushrooms from barbecue.
- Cover steak; let stand 5 min.
- Meanwhile, mix mayonnaise and peppers.
- Slice mushrooms and steak.
- Spread 4 bread slices with mayonnaise mixture; top with mushrooms, onions, meat, cheese and arugula.
- Cover with remaining bread slices.
