Tuna Loaf With Vegetables
- 2 (7 oz.) cans tuna, flaked
- 1 c. crushed potato chips
- 1 (4 oz.) can sliced mushrooms
- 2 tsp. grated onion
- 2 Tbsp. minced pimento
- 1 Tbsp. lemon juice
- dash of pepper
- 1 egg, beaten
- 1 c. thick white sauce
- 6 small potatoes
- 6 small carrots
- 6 medium onions
- 1 c. water
- Combine tuna, potato chips, drained mushrooms, onion, pimento, lemon juice, pepper, egg and white sauce.
- Blend and pack in an oiled mold.
- Cover mold and place in the bottom of deep-well kettle.
- Arrange vegetables around mold.
- Add water and cover kettle.
- Turn switch to high heat and when steaming freely, turn to low heat and simmer for 45 minutes or until vegetables are done.
- Serves 6.
